In other serious news, one of my mainstays (probably on the fringe of what you're looking for) continues to be Fable. It's been played by 99% of the People Who Like To Play Video Games, but if you're part of that 1%, it's definitely worth at least a playthrough. Its player choices are not as... decisive as they were initially made out to be, but there are still significant path differences between the polar moralities.

Not a game to replay immediately play after completing it, but: Final Fantasy VII. Got it on STeam during the sale, this is the fourth time I'm playing it through, though the first time not doing it on a Playstation.

I like games with replay value in the same way people like Tetris and Solitaire. It helps me relax...my two faves are Diablo II and Elder Scrolls 3:Morrowind. Both are old as dirt, but they get the job done. Halo games are good for re-spins, too.

I actually like the controllers, and found them really intelligently mapped. I understand a lot of PS players like those better, they just work for me.

Keyboard vs Controller depends on the game. Theres a ton of games where I need my full keyboard, tons of shortcuts, and the ability to type fast. Then there are some games, even on PC where I simply hook up an xbox controller and go to town, most of the time those games had console counterparts and the keys are mapped decently. Also, anything with a lot of driving means controller win.

As far as replay value in games: Diablo 2, any Elder Scrolls game as well as Fallout 3, and I could sit down and play Bastion at whim.

Also: Audiosurf. It's a great game for relaxing for a few minutes at a time. I haven't picked up the second one yet, but I'm really excited for it.

Both Fallout 3 and Fallout New Vegas would probably suit you well, Ive put in 300+ hours on New Vegas with all DLCs purchased and I still feel I got another replay in me
