I've never recorded games on iPad before. Will need someone to explain how to do this like I'm 5 years old.

Disclaimer: being a macOS user myself, I'll just describe the process from that perspective.
If you're using Windows, additional digging may be required. With that said:
1) Regardless of your OS of choice, you will require a desktop/laptop running the freeware
OBS.
2) Once you have installed OBS, the first part of the following
guide will show you how to link OBS to your Twitch channel.
3) As you'll now want to select the A/V source for your stream (i.e. your iOS device), follow
these few steps.
Having completed the guide from step 3, you should now be pretty much good to go.
Once you have your QT window up and running, I would recommend checking its settings in the drop-down menu next to the Rec button.
For instance, mine had the quality set to 'high' rather than 'maximum'. Simply preposterous.
Also, this same menu will let you select the audio source to go with your video feed.
