Some RPG bosses can get pretty bad with the inflated life totals thing. You get into your groove and figure out when to attack and when to heal and then... well there's no more decisions to make for the next ten minutes. You just have to hope the boss doesn't get a critical.
Any boss that has you dodge dozens of attacks just to give you a narrow opening to go on the offense that you can easily miss.
Any boss that's just a basic enemy with enough hp to set it apart. Bosses should be special.

I agree; even something like Dragon Age series where the battle system has more tactical elements and can even be experienced in real time, the amount of decision making needed against the bosses is pretty low once you get a healer and a well-equipped tank. In fact the biggest challenge with RPG bosses in general seems to be the preparation for it (grinding for experience and gear) and minimizing the cost of victory in preparation for the next boss (like using resource recovery items or status removers).
... also tedious bosses in general bother me regardless of the genre ... like if the difficulty of the boss is just massive HP and high but easily mitigated damage, Im not engaged.
(Repetitive attack Patterns arent necessarily tedious though; it depends on the amount of time given to react after a telegraph, which adds a bit of frenetic energy to offset the simplicity).
