Prep time: Approximatey 20 minutes total
Glaze: 1/3 cup Orange Juice 1/2 cup Honey 1/2 stick Cinnamon (1/2 teaspoon) Pinch of sea salt Sprig of Mint
Fruit: 6 oz. unsalted butter 1 small pineapple (about 1 1/2 pounds) (alternately 3 Peaches) 1/2 cup packed brown sugar 1/4 cup (2 fl. oz.) fruit liqueur
Instructions: Mix glaze ingredients in small bowl until you achieve an even consistency. Set aside.
Take pineapple and chunk the fruit to approximately the same size as the first joint of your thumb. Alternately, if using canned fruit, use pineapple slices and quarter them.
Melt butter in frying pan over medium heat. Add pineapple slices and saute for one minute. Sprinkle evenly with brown sugar and cook, turning pineapple occasionally, until sugar is melted. Add alcohol, stir to marry, and cook an additional minute. Add glaze slowly to evenly coat pineapple and cook until glaze thickens.
To Serve: Place pineapple on plates and spoon warm sauce over top.
Pairs well with Ice cream or Crepes.
Makes: Approximately 6 or so servings, depending on the size of the pineapple, and how thick or thin you slice it.
