Do we know anything about the current state of Mercadia? Or is it just "Weatherlight crew beat the bad guys, then left"?

Pretty much that. I don't see it changing too much either. The goblins will keep things in line and merchant politics will continue as normal. All they are really missing out on is inter-planar trade now that whatever Phyrexian portal ships they may have been able to salvage don't work anymore.

It depends entirely on if you look at Scourge or not.

The Phyrexians countered the insurgency by compleating the Kyren goblins so that they would be able to retain control.
In Future Sight, we saw a bit of the Ramosian movement still being around.
